Sartorial Host's Best Batch
We’re celebrating this weekend and I’m sharing one of my favorite batched cocktails. In fact, it might be one of my best batches. My friend has invited family and friends to celebrate his son’s first birthday and just because it’s a kids birthday doesn’t mean the adults should have to go without… *cue the scene at the end of every Semi-Handmade Cooking with Sandra Lee episode where she batches a very aggressive adult cocktail.
That being said, I love this particular recipe because of its easy drinkability and simplicity of ingredients. I love a complex and herbaceous drink and this blend of rosemary simple syrup and green Chartreuse is gold. Batching is also a great way to give you more time to entertain your guests and still provide an amazing cocktail that guests can self-serve to their heart’s desire.
ROSEMARY GOLD
Serves 14-16
ingredients + TOOLS
Lemon press
Medium saucepan
Mesh sieve
Medium mixing bowl
6-7 sprigs of fresh rosemary, additional sprigs for garnish
4 cups of granulated sugar
4 1/2 cups of water
24 large lemons, juiced
875 ml or 32 oz bourbon whiskey
8 oz Chartreuse, green
STEPS
Prep the rosemary by removing the leaves from the stem. The easiest way to do this is by holding the sprig of rosemary at its top, slide your fingers down it, to the bottom, which will release the leaves.
In a medium saucepan, heat the rosemary leaves, sugar, and water until it reaches a boil.
Once the syrup mixture comes to a boil, turn off the heat and allow to sit for 5-10 minutes.
Pour the rosemary syrup through a mesh sieve into a medium bowl and set aside.
Split the whiskey, Chartreuse, lemon juice, and rosemary syrup among the 4 glass bottles.
Add one cup of water to each of the bottles, seal the bottle, and shake to combine.
Refrigerate until ready to use. You can make this 2-3 days before the day of your event. I like to add a few sprigs of rosemary to the bottle just before serving to give guests an idea of what is being served.
Here are a few ways to serve this batched cocktail:
One option is to give guests the freedom to serve themselves and leave the bottles out with fresh sprigs of rosemary and slices of lemon in serving vessels. Poured over ice with a sprig of rosemary and lemon slice, and they are off!
You can also serve guests a freshly shaken cocktail by adding ice and pouring a 3-4oz portion of the batched cocktail into a shaker, shake vigorously, and pour over a large ice cube or into a martini glass. I like to slap the rosemary sprig against my hand to release the natural oils before garnishing the glass.

1 Tbsp or 1/2 oz green Chartreuse
1/2 oz rosemary simple syrup
1 Tbsp or 1/2 oz lemon juice
