Earl Grey Dalgona Milk Tea
In the continued celebration of Lunar New Year, I wanted to create a fun drink that combines a few of my favorite things. I love anything earl grey and coffee, and this blend of floral and acidic notes is the perfect afternoon snack or dessert drink to keep you caffeinated. An unsweetened milk tea is combined with brown sugar tapioca pearls and a lusciously sweet whipped coffee for really nice finish.
Earl Grey Dalgona Milk TEa
ingredients
1 cup of uncooked black tapioca pearls
1 cup of light brown sugar
6 cups of whole milk or milk alternative
10 bags of earl grey tea
4 Tbsp instant espresso coffee
4 Tbsp granulated sugar
4 Tbsp cold water
STEPS
In a medium to large saucepan, heat the milk and steep with the tea bags for 8-10 minutes. Remove from heat and let cool.
Cook tapioca pearls to package specification and combine with light brown sugar.
In a medium bowl, combine granulated sugar, coffee, and water. Using a hand mixer or a whisk, vigorously whisk until mixture turns silky smooth and shiny, then continue whisking until it thickens and holds its lofty, foamy shape.
Once the earl grey milk has cooled, layer in the tapioca pearls, ice, milk, and top with the Dalgona coffee whip and serve immediately.
